Birria is having a bit of a moment but I’ve been fortunate enough to get to enjoy it for many years now.  The stew originates from Guadalajara, Mexico. Goat meat was one of the original animal proteins used in this Mexican stew, known today as birria.
My sister Paula lived in Guadalajara for a while so I love when a food dish like this brings back memories of visiting her.  Most restaurants today you’ll find it served with beef. If you're lucky, you might find a Mexican restaurant or food truck that uses goat.
