his creamy dijon potato salad is a delicious and savory side dish that is perfect for any occasion. The potatoes are cooked until fork-tender, then mixed with a creamy dijon dressing, green onions, parsley, dill, and red onion.
This pairs great with our goat schnitzel recipe.
2.5 lb. potatoes of choice (preferably reds) skin on, boiled
2 tbs. salt
1 tsp. black pepper
1 bunch green onion, minced
Small bunch of both parsley and dill, minced
8 oz dijon mustard
8 oz sour cream
8 oz mayo
1 red onion, diced
Boil your potatoes until fork tender the day before making the potato salad.
Let the potatoes cool overnight in the fridge.
Cut boiled and cooled potatoes into 1” cubes.
In a bowl, mix cubed potatoes with the rest of the ingredients.
Let the potato salad chill until you're ready to eat it.
