It's always fun to see goat meat have a bit of a moment and that's been especially true with birria. Traditionally made with goat, but sometimes also with beef, birria has seen a huge resurgence on TikTok and Instagram in various forms including birria ramen, pizza, and quesadillas. This year it's even making an appearance at Coachella at one of the food stands!
Coachella is an annual music and arts festival held in Southern California. Taking place over two weekends in April, popular musical artists perform on different stages and attendees can also check out art installations, exhibits and a wide variety of food vendors from well-known eateries and food trucks from across the country.
This year, a food truck from Compton, California called The Goat Mafia is serving up a variety of birria tacos to attendees - and yes, their birria is made with goat.
Their recipe has been passed down four generations from Jalisco where birria originated and has won some serious accolades, including a feature in Bon Appétit. I took a look at their menu and my mouth started watering!
Though it can't compare to an authentic Jalisco version, if you'd like to try goat birria for yourself you can give my recipe a try. I typically make mine with goat stew meat, a goat roast, leg or shanks and you can use the leftovers in ramen, pizza, tacos or whatever other dishes you can dream up.
