As you might now know goat meat, or also known as chevon, is increasing in popularity with metro restaurants and customers alike, just a take a look at this Milwaukee Journal-Sentinel article, Goat Meat Wins Fans. I am a local source for goat meat in the Minneapolis-St. Paul area and Western Wisconsin.
I farm in western Wisconsin, just outside of Deer Park, which is about 45 minutes from the Twin Cities. Cylon Rolling Acres is a grass-based farm, which means our goat herd is raised on pasture during spring, summer and fall seasons. Since we practice rotational grazing, typically goat meat is available October through February, with some limited availability outside that time.
We work with a local USDA inspected facility for processing, but also are flexible to your needs and can work with your own meat processor.
